The stuffing—a mixture of locally sourced Caciotta cheese, wild oregano, basil, and eggs—brings a rich, creamy contrast to the dough.

A dish so seemingly effortless requires precision: the dough must rest to develop its elasticity, the filling must be compact, and the tomatoes—sourced from the fertile lands around Mount Vesuvius—must be cooked just enough to preserve their natural sweetness.

“This is a dish I learned when I was 16,” says Lionetti. “We have kept it true to its origins, only refining its presentation for our clientele. The soul of the recipe remains untouched.”


A Culinary Journey: From Tradition to Innovation

Chef Lionetti’s path to Michelin stardom began at the age of 15, in the famed Capri restaurant Paolino. From there, he moved to the snow-covered landscapes of Alta Badia, where he expanded his knowledge of cuisine and refined his techniques. But it was under the mentorship of Chef Gennaro Esposito, at a two-Michelin-starred restaurant, that he truly evolved.

“Chef Esposito taught me to value local ingredients and work with the seasons. If it’s tomato season, we celebrate tomatoes. Every ingredient should shine in its own right,” he reflects.

This philosophy has shaped his approach at Monzù, where every dish is a testament to the land and sea of Campania. From handcrafted olive oil to buffalo mozzarella, he travels extensively to witness their production, ensuring that every ingredient tells a story on the plate.


The Art of Cooking: A Collective Vision

For Lionetti, cooking is more than just technique—it is a collective expression of passion. His team at Monzù is a close-knit family, bound by creativity and mutual respect.

“We are friends first, colleagues second,” he emphasizes. “Everyone has the freedom to express themselves, and together we create something greater.”

This philosophy extends to his view on cooking itself. Is cooking an art?

“Absolutely,” he says without hesitation. “Cooking is both simple and complex. It requires creativity, respect for tradition, and a touch of innovation. But above all, taste comes first. Presentation is important, of course, but the flavors must always take center stage.”

For Lionetti, Monzù is more than a restaurant; it is a second home. Over the past nine years, he has watched it flourish, gaining recognition and a loyal clientele.

“When I hear the name ‘Monzù,’ a whole world opens up. We have worked hard to build this reputation, and seeing our guests return, leaving happy, is the greatest reward.”

With the breathtaking backdrop of Capri’s coastline, Monzù offers more than just fine dining—it provides an experience that captures the very essence of Italian hospitality.

And yet, for Lionetti, the journey is far from over.

“To continue dreaming—that is my dream. When we stop dreaming, we stop living.”
